  1. Prepare the Sponge Cake

    • Preheat the oven to 375°F (190°C). Grease a jelly roll pan and line it with parchment paper.
    • Whisk egg yolks and sugar until light and fluffy.
    • Sift together the flour, cocoa powder, baking powder, and salt. Gradually fold this into the yolk mixture.
    • Beat egg whites until stiff peaks form, then gently fold them into the batter.
    • Spread the batter evenly on the prepared pan and bake for 12-15 minutes.
